Fresh Product Processes

Involves all applicable processes which occur when the product still has a high moisture content. There are several types of processes that are carried out with fresh product, but among the most common we can find preserving, withering, cutting, chopping, rolling and fermenting processes. The presence and order of these processes, as well as their particular operating parameters, will define the characteristics of the resulting product.

Processes of Dehydration

In the processes of dehydration, the aim is to reduce the level of moisture in the product of interest. This drying process also brings with it the interruption of any other process that is being carried out in the product, e.g.; a previous process of fermentation. Multiple parameters are controlled during the process to obtain the desired final moisture level. Among these parameters we can find the drying time, the air flow temperature, etc.

Dry Product Processes

Dry product processes are commonly found towards the end of the production line. Among these we can find the typification and classification processes. These processes consist of the separation of the types of resulting products from the production line. Prior to the processes of storage and packaging, it is necessary to physically separate the product of interest from the rest. Among the most common machines we can find different types of shakers, such as Bratt or Myddleton, destemmers, mills and java channels.

Heat Generation and Interchangeables

The generation of heat is vital in food processing. There are several processes that require large amounts of heat to ensure the quality of the resulting product. Generators, which can be fed by gas or biomass, and steam fed heat exchangers are commonly used in the food industry. Experience and engineering skills are of great value to dimension the correct caloric requirement of the production line.

Automation Lines

It is necessary to have transport systems to move the product from one process to another. There are several types of transport systems, and it’s necessary to select the appropriate one for each set of requirements and conditions. Among the most common we can find the transport by trays, drawer, endless axle, conveying belts or pneumatic. In the latter, the product is transported by an air stream, as long as the product allows it.
